Oysters from Our ProducersSebastián and Nathalie
We receive oysters straight from the French island of Oléron, located on the Atlantic coast, from our producers Sebastián and Nathalie. Thanks to their reduced annual production of 100 tonnes, they keep an eye on every oyster they send us, and so, they have the best possible quality production as their hallmark.
Their knowledge of the area allows them to make the most of each sandbank, current and wave, in order to keep the oysters in optimal condition so they can eat and grow in the best way possible.
The oysters that are ultimately selected spend four and a half years at sea, in their best sandbanks. It is there where the first waves come in with the most nutrients and where the currents force the oysters to work. Hence the fact that they have a more developed and crunchy muscle, which provides them with a more intense marine flavour.
