One of the reasons why El Txoco stands out is for being the only place in Málaga and its province where you can find the exclusive ox chop from the best meat in the world, according to major international media such as Time, Vogue or Stern magazines as well as newspapers such as The Guardian and The New York Times. Oxen and cows are selected personally by José Gordón from El Capricho (León). Nowhere else in the province of Málaga (including its capital) will you be able to taste it. The years that the oxen spend on El Capricho farm are lived in dignity and their ‘sacrifice’ is also dignified, as they are always accompanied. The life that the animal leads in the farm, its diet and its character will influence the quality of the meat, its fattiness and texture, and even the nuances of its flavour. The ageing process of the meat pieces can last weeks or even months, depending on the needs of each cut.
