At El Txoco we practice a “Cuisine from North to South” where diners can savour a great variety of dishes and products from all over the Iberian Peninsula, which range from baby lamb chops from Ribera del Duero and Iberian “secreto” pork cut from El Valle de los Pedroches to chilled soups such as “ajoblanco” from Málaga and “salmorejo” from Córdoba, including bluefin tuna from the Strait of Gibraltar or cow and ox meat from José Gordón’s El Capricho, in León.
